The crispy Apple Fritters offer a warm, fruity treat with a sprinkle of cinnamon sweetness, while the Chocolate Chip Cookie Nice Cream Sandwiches are a refreshing twist on ice cream sandwiches, sweetened naturally with dates and bananas, says Chef Saatvvika Handa from Blaasé, Ludhiana. “Besides, there is the Berry cheesecake toastie, which combines tangy berries and creamy cheese on toasted bread, and the Honey stewed apple toastie, where caramelised apples and almond slivers make for a comforting snack.”

Crispy Apple Fritters with Cinnamon Sugar
A fresh take on a classic favorite, these apple fritters are crispy, warm, and dusted with a touch of cinnamon sweetness. Made with yoghurt for extra lightness, this is a great way to sneak in fruit while kids enjoy a delicious dessert!
Ingredients
Batter:
- Flour, 1 cup
- For dusting apples, 3 tbsp
- Chickpea flour (besan), 1 tbsp
- Baking powder, 1/4 tsp
- Pinch of baking soda
- Yoghurt, 3 tbsp
- Water as needed (~1/2 cup + 2-3 tbsp)
- Oil or ghee, for frying
- Apples, 2
For dusting:- Fine sugar, 1/3 cup
- Cinnamon powder, 1/4 tsp
Method- Combine flour, chickpea flour, baking powder, and baking soda in a bowl.
- Add yogurt and water to form a thick batter.
- Cut apples into round slices and dust with flour.
- Heat oil/ghee and dip each apple slice in batter before frying until golden.
- Drain excess oil, then coat each fritter in cinnamon sugar. Serve warm!

A healthy twist on ice cream sandwiches! Made with frozen bananas and dates for natural sweetness, this dairy-free "nice cream" is sandwiched between soft-baked chocolate chip cookies for an irresistible treat.
Ingredients
- Flour, 47 gm
- Butter, 32 gm
- Icing sugar, 15 gm
- Honey, 1 gm
- Cocoa powder, 7 gm
- Milk, 10 ml
- Chocolate chips, 20 gm
Method- Cream butter, sugar, and honey. Mix in flour, cocoa powder, milk, and chocolate chips.
- Shape dough into 8 small balls and freeze for 20 minutes.
- Preheat oven to 180°C. Bake cookies for 20 minutes, then let cool.
Banana nice cream ingredients- Frozen bananas, 2
- Dates (soaked in hot water), 2
- Vanilla essence, 1/2 tsp
Method- Blend frozen bananas, dates, and vanilla to create a smooth "nice cream." Set in freezer for a bit more firmness.
- Scoop a spoonful of nice cream onto one cookie and sandwich with another. Enjoy!

Ingredients
- Bread/Dry cake, 1 slice
- Cream cheese, 2 tbsp
- Sugar/jaggery (or any natural sweetener), 1/2 tsp & 1/4 tsp (for berries)
- Vanilla essence, 1/4 tsp
- Butter/ghee, 1/4 tsp
- Honey, a drizzle
- Mixed berries, 1/2 cup (or more depending on choice)
- Cookie of choice, 1, crumbled
Method- Take your bread slice and spread butter & honey. Grill it on a non-stick pan on medium-low until the honey is caramelized, or golden brown.
- Mix cream cheese with sugar & vanilla essence and spread on the toasted bread.
- Mix berries with sugar and add on top of the bread slice.
- Top the berry toast with cookie crumble and enjoy.

Ingredients
- Bread/Dry cake, 1 slice
- Sugar/jaggery (or any natural sweetener), 1/4 tsp (or more if you want extra sweet)
- Cinnamon powder, 1 pinch
- Butter/ghee, 1/4 tsp
- Honey, a drizzle
- Apple, 1, cut into big square chunks
- Toasted almonds, 4-5 pcs
Method- Mix the apples with sugar and cinnamon powder.
- Spread butter and honey on your bread slice. Grill it on a non-stick pan on medium-low until the honey is caramelised, or golden brown.
- Cut the toasted almonds into slivers.
- Cook the sugared apple with a teaspoon of water on low heat until translucent.
- Top the toast with cooked apple & almond slices and enjoy.
