Michelin-star chef Vikas Khanna, who is currently busy running his New York City restaurant Bungalow, opened up in an interview with FOX 5 NY about his diet and workout, sharing how discipline rules his world. Once declared among the hottest chefs in America, he spilled the beans on what keeps him going.
“I am extremely disciplined which is very hard for people to believe; how I count everything I do. I do one thing at a time. That is why I don’t expand or do too much stuff. I stay true to what I do. It gives you the liberty to have a certain discipline,” he said.
And this discipline is maintained through rituals that are important to him, including working out. “I bike everywhere in the city. I haven’t taken the subway for many years. I have to buy so much stuff before coming to the restaurant that sometimes people take my picture when I am carrying six bags on the bike.”
Talking about his diet, he shared he doesn’t skip breakfast at any cost and shared the foods he enjoys the most. “Granola, boiled eggs. I do very less milk because I don't feel very good if I drink too much milk in the morning like the way I used to drink in India. I'm addicted to coffee, and I also have a bowl of nuts. Everything is measured and kept in my fridge! Even if you call me at 5:00 AM, I'm going to have my breakfast and leave the home. I'm so regimented in that. I don't leave home without eating something,” he said.
And what does he keep in his fridge? He revealed, “Granola, nuts, fruits (berries only), eggs, coffee, and milk.” He also admitted to one of his amusing habits, saying, “Even if it's snowing, I have to drink iced coffee. Horrible, but I love it.”
Also, the Michelin-star chef is not into cheat days and there’s a reason for it. “I do a lot of tastings in the restaurant. In a way, I call that a cheat meal because I would eat 16 to 18 ounces of meal just tasting it. And these are high sodium, high fat meals... but you've got to taste everything that is being served, right?”
He also left a message for those who live in big cities surrounded by many temptations. His words of wisdom included avoiding indulgences and consuming home-cooked meals mindfully.
