Classic Thandai Popsicle

"It's a thandai to be enjoyed like a popsicle, crafted with premium ingredients and traditional spices, it's a refreshing twist on a classic favourite."

Ingredients:

  • Milk, 1 cup
  • Sugar (adjust to taste), 1/4 cup
  • Thandai powder (readily available or homemade), 2 tablespoons
  • A handful of chopped nuts (almonds, cashews, pistachios)
  • Saffron strands (optional, for garnish)

Method:
  • Combine milk, sugar, and Thandai powder in a blender. Blend until smooth.
  • Stir in the chopped nuts into the mixture.
  • Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  • Insert popsicle sticks into each mould.
  • If using saffron strands, gently place a few strands on top of each popsicle for garnish.
  • Freeze the popsicles for at least 6 hours or until solid.
  • Once frozen, run the molds under warm water for a few seconds to loosen the popsicles.
  • Carefully remove the popsicles from the moulds and serve immediately.

Holi Special Wash Up

Ingredients:

  • Vodka, 30 ml
  • Tequila, 30 ml
  • Triple Sec, 30 ml
  • Fresh Orange Juice, 15 ml
  • Fresh grape juice, 15 ml
  • Fresh cranberry juice, 15 ml
  • Blue Curacao, 30 ml

Method:
  • Use the alcohol and liquid density
  • Build the beverage based on that density. Serve.

Tamarind Ginger Fizz

Ingredients:

  • Tamarind and Jaggery Serums, 25 ml
  • Fresh ginger, ½
  • Orange juice, 40 ml
  • Lemon juice, 15 ml
  • Top Up Soda

Method:
  • Strain out the pulp using a strainer.
  • Then, add crushed jaggery, salt, and cumin powder, stirring well.
  • Adjust the consistency by adding more water as needed and the sweetness by varying the amount of jaggery.
  • Garnish with mint or basil leaves.
  • Serve chilled.

Gulabi Thandai

Ingredients:

  • Rose syrup, 15 ml
  • Milk, 60 ml
  • Rum/tequila, 45 ml

Method:

For the syrup

  • Infuse Rose petals in Sugar Syrup
  • Or make a rose syrup with sugar and water with a dash of rose water

For the Thandai:
  • To make the thandai, pour all the ingredients in the serving glass
  • Mix it well and serve .

Golden Cleanser

"A delightful  revitalising blend designed to detoxify and invigorate."

Ingredients:

  • Fresh pineapple, peeled & chopped, 2 cups
  • Fresh ginger root, peeled & chopped, 2 inches
  • Turmeric root, peeled & chopped, 3 pieces
  • Lemon juice, 10 ml
  • Coconut water, 200 ml
  • Soaked chia seeds, 1tsp

Method:
  • Peel and chop pineapple, ginger, turmeric
  • Push pineapple, ginger, turmeric and lime one at a time through a high-powered juicer.
  • Put all the ingredients in a blender and blend it until smooth and strain it and serve.
  • Stir the juice to blend well.
  • Pour 1/4 glass full of juice, 1/4 glass full of crushed ice, and fill the rest of the glass with coconut water or distilled water
  • Add soaked chia seed and mix well
  • Garnish with lime slices and fresh mint. Serve.
