The first roza or fast, begins with the sighting of the moon. Fasting, is one of the Five Pillars of Islam, with obedience to specific rules and guidelines, as per the Holy Quran, during the month-long Ramzan, which begins this year on March 11 or 12.

During Ramzan, Muslims observe a fast from food and drink from sunrise to sunset, with a view to drawing closer to Allah and practising self-restraint and gratitude.

As fasting for the entire month can be tedious and stressful for the body, food choices need to be made carefully especially at sehri or suhoor, the meal before sunrise, before commencing the first roza.

Chef Ganesh Amkar, executive sous chef, Ummrao, Courtyard by Marriott, Mumbai International Airport, explains, "Before the first roza (fast) of Ramadan, it is customary for Muslims to partake in a pre-dawn meal known as suhoor, which holds a special significance in the Islamic tradition. As a chef, I understand the importance of providing our guests with a balanced and energising meal to sustain them throughout the day.”

Mumbai-based home chef Mumtaz Kazi Pawaskar, who specialises in Kokni Muslim cuisine opines. “People generally take it easy for the first roza, as it takes the body, a while to adjust to the odd eating hours. So, they eat a light but complete meal for the first sehri: Banana, fried eggs with paratha. Older people prefer sabudana and suji porridge, as it is easily digestible.”

Typically, foods that provide lasting energy and hydration, such as complex carbohydrates, protein and fruits, are consumed. Whole grains, eggs, yogurt and nuts, are also popular choices, due to their ability to provide sustained energy throughout the day. Hydration is equally important, so drinking plenty of water and fluids is encouraged.

“Overall, the foods eaten before the first Roza, are carefully selected to ensure that individuals have the necessary nutrients and energy to sustain them through the day of fasting,” quips Amkar.
