It is Christmas, and the perfect time to bake goodies that can be relished through the holiday season. A little indulgence in the winter chill doesn’t hurt! While baking a cake is what most people usually do, you could also opt for little treats like cupcakes in a flavour that is Hailey Bieber-approved.

For her Christmas bash with friends, Hailey brought a batch of delectable vanilla chai cupcakes, pictures of which were shared by Kendall Jenner. The intimate party included pizza and other desserts brought by guests. However, Hailey’s treat caught attention and for the right reasons.

For those curious about the recipe, look no further. Here’s the one shared by Whitney DePaoli, who runs the Instagram handle Sugar & Sparrow. Her moist and fluffy chai cupcake recipe is simple, easy to bake, and looks delicious. It will surely add delight to your celebrations with family and friends.

Chai cupcake recipe

For Chai spice mix⠀

  • 2 tsp ground cinnamon⠀
  • 1 tsp ground ginger⠀
  • 1/2 tsp ground cardamom⠀
  • 1/4 tsp ground allspice⠀
  • 1/8 tsp ground cloves⠀

For Chai cupcakes⠀

  • 1/2 Cup + 2 Tbsp (150 ml) whole milk⠀
  • 1 chai tea bag⠀
  • 1 1/4 Cups (132 g) sifted cake flour⠀
  • 1 1/2 tsp baking powder⠀
  • 2 tsp chai spice mix (recipe above)⠀
  • 1/2 tsp salt⠀
  • 1 /2 Cup (113 g) unsalted butter, room temperature⠀
  • 1 Cup (200 g) granulated white sugar⠀
  • 1 large egg + 1 large egg white, room temperature⠀
  • 1/4 Cup (60 g) sour cream, room temperature⠀
  • 1 1/2 tsp pure vanilla extract⠀

Instructions⠀

  • Mix together the chai spice mix ingredients and set aside.
  • Place the chai tea bag into a jar. In a small saucepan, bring the milk to a simmer, then pour it over the chai tea bag. Steep for 15 minutes, then remove the chai tea bag and cool to room temperature. ⠀
  • Preheat the oven to 350°F (177ºC) and line a cupcake pan with liners.⠀
  • In a medium bowl, whisk together the cake flour, baking powder, 2 teaspoons of the chai spice mix, and salt. Set aside.⠀
  • With a stand mixer fitted and paddle attachment (or with a handheld mixer and large bowl), cream the butter and sugar on medium speed until light and fluffy, 3-4 minutes. Turn the mixer to low and mix in the egg and egg white until combined, then add vanilla and sour cream and mix for one minute on high. ⠀
  • Add the dry ingredients all at once, then mix on low. When it starts to combine, add the (room temperature!) chai milk mixture and mix until incorporated.⠀
  • Scoop the batter into the cupcake liners and bake for 14-18 minutes. Cool to room temperature, then frost with chai buttercream.
