Healthy Christmas cake recipe: Food creator shares a no alcohol, no maida cake you’d love to bake

If this holiday season you’re in the mood to bake a cake for your loved ones and want it to be healthy too, a food creator has shared the perfect recipe without alcohol or maida. What’s more? You can use natural sweeteners to replace sugar.

It’s the holiday season, and with Christmas around the corner, there’s no better way to celebrate than baking a cake for your loved ones. For those looking for healthy recipes, food creator Meghna Kamdar, who runs the handle Meghna’s Food Magic on Instagram, shared a no alcohol, no maida recipe for a Christmas cake that looks absolutely delicious.

What makes it even more special: it isn’t time-consuming and is perfect for those who don’t drink and like to avoid all-purpose flour. Even the brown sugar can be replaced with natural sweeteners like jaggery, honey, or dates.

Sharing the recipe in the caption, Meghna, who enjoys a following of 3.1 million on Instagram, wrote, “The Christmas Cake you’ve been waiting for! Made with wheat flour and zero alcohol, it’s wholesome, moist, and ridiculously easy to bake. Save this recipe!”

No alcohol, no maida Christmas cake recipe

Ingredients

  • 1/2 cup mixed nuts (cashews, almonds, walnuts)
  • 1/2 cup dried fruits (raisins, cranberries, dates, dried pineapple, dried mango)
  • 1 cup orange juice
  • 3/4 cup brown sugar
  • 3 tbsp water
  • 1/4 cup oil
  • 1 cup wheat flour
  • 1 tbsp cocoa powder
  • 1 tbsp dry ginger powder
  • 1 tbsp cinnamon powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • Leftover orange juice (from soaking)
  • Extra mixed nuts and dried fruits
  • Honey or maple syrup

Instructions

  • In a bowl, soak 1/2 cup mixed nuts and 1/2 cup dried fruits in 1 cup orange juice for 2-3 hours.
  • In a saucepan, melt 3/4 cup brown sugar with 3 tbsp of water until it boils then turn off the heat and allow it to cool.
  • Once the caramel syrup has cooled, stir in 1/4 cup oil and add the soaked nuts and dried fruits, excluding the orange juice.
  • In a mixing bowl, combine 1 cup wheat flour, 1 tbsp cocoa powder, 1 tsp dry ginger powder, 1 tsp cinnamon powder, 1/2 tsp baking powder, and 1/4 tsp baking soda. Mix everything well.
  • Add the wet mixture (from step 3) to the dry ingredients. If the batter is too thick, add a couple of tablespoons of the leftover orange juice for perfect batter consistency.
  • Pour your batter into a lined and greased baking tin, sprinkle some extra dried fruits and nuts on top, and bake in a preheated oven at 180°C for 45-50 minutes! Or use the stovetop method by placing it in a preheated large pan for about 60 minutes.
  • For an extra shine, brush the baked cake with honey or maple syrup once it’s cooled!
