A favourite among North Indians, the dish combines flavourful spiced chickpea (chole) curry with fried bread (bhature). It is usually enjoyed with onions, pickles, chutneys, and chilled lassi at breakfast.

Papri Chaat

A popular North Indian street snack, this one is highly enjoyed for its crispy freshness and burst of flavours. It is made by topping deep-fried wafers (papri) with tamarind and mint chutney, black grams, potatoes, sev, pomegranate, spices, and curd.

Vada Pav

Vada pav is one of the most loved street foods, where the vada is made by frying spicy mashed potatoes in chickpea batter and enjoyed with white bread rolls. It is an inexpensive dish, which is enjoyed by many in the country, particularly by Mumbaikars.

Chana Masala

Chana masala is a North Indian delicacy where tangy chickpea curry simmered in spices and herbs is enjoyed with rice or flatbreads as a meal. It’s dressed with fresh mint leaves or coriander, and yoghurt. This dish is available in many variations, which are equally loved.

Boondi 

Boondi are enjoyed in curries, curds, and salad. They are basically small round balls made from besan (gram flour) that are deep fried. Besan is prepared with a variety of ground chickpeas. While boondi may look tiny in size, they add crunchiness and flavour to dishes.

Dhokla 

Dhokla, made from fermented gram flour batter and rice, is a delectable snack from the state of Gujarat. It's spiced with chillies and ginger, which make it flavourful and delicious. Many variations of it are available, such as semolina, rice powder, or cheese dhokla.

Ganthiya 

With its origins in Gujarat, ganthiya is a perfectly soft and puffy savoury snack, often enjoyed with tea. It is deep-dried and made from gram flour. Just like other snacks, this one comes in a sweet version as well.

Katori chaat

Katorti chaat is a delicious traditional dish. Its baskets are made from grated fried potatoes and filled with ingredients such as curd, potatoes, chickpeas, or chutneys. Healthier versions are baked ones. topped with sprouts, onions and tomatoes.

Pindi chole

It is a popular Punjabi dish made with chickpeas, split bengal gram, cardamom, cinnamon, cumin, ginger, chili peppers, tea leaves, baking soda, turmeric, onions, garlic, tomatoes, garam masala spices, and coriander. It’s mostly served with bhatura, roti, naan, or jeera rice.
