If you are thinking of starting the New Year 2026 on a healthy note, here is an interesting option: Check out nutritionist Arjita Singh's delicious shakshuka recipe, a simple dish made of poached eggs in a flavourful tomato and bell pepper sauce. For those who have little time in the mornings, this is the perfect go-to breakfast that won’t disappoint.

Health benefits of the shakshuka dish

Eggs are high in protein and keep you full for longer. This supports fat loss. They also give you energy and increase productivity throughout the day.

Tomatoes and bell peppersare high in fibre, antioxidants, and vitamin C, which are great for strengthening immunity and improving skin health.

Onion and garlicare excellent for gut health and digestion. They also boost immunity and help regulate blood pressure.

Chillies boost metabolism and add flavour without adding calories.

A little butter helps absorb nutrients and adds satiety.

Ingredients

Bell pepper, 1 red

Tomatoes, 4

Onion, 1

Garlic cloves, 3

Green chilli, 1

Butter, 1 tsp

Salt, to taste

Black pepper, 1 tsp

Red chilli powder, 1 tsp

Eggs, 3

Fresh green garlic (for garnish)

Instructions:

Add butter to a pan.

Using an electric chopper, finely chop onion, garlic, and green chilli and add it to the pan.

Let it cook till fragrant.

Add chopped red bell pepper, cook for a bit, then add chopped tomatoes.

Season with salt, pepper, and red chilli powder.

Let everything cook down for 5–10 minutes until soft and saucy.

Make small wells in the same pan, crack in the eggs, cover, and let them cook.

Cook longer if you like well-done eggs, shorter if you prefer a runny yolk.

Finish with fresh green garlic on top. You can add chilli flakes, oregano or seasoning of choice.
