Mix chia seeds, milk and vanilla. Let it soak for at least four hours or overnight. Layer the chia pudding with yoghurt, a light drizzle of coffee, and a dusting of cocoa powder. Repeat layers and chill before serving.

Berry almond chia pudding: Soak three tablespoons of chia seeds in a cup of unsweetened almond milk overnight. This is antioxidant- rich, slightly sweet, and ideal for breakfast or a mid-afternoon energy boost.
