
If you are one of those who checks the expiry label diligently, you’d be surprised to know there are some foods that almost never spoil. They don’t come with a “use by” date, throwing all sense of urgency out of the window for good. They contain distinct chemical compounds that resist bacteria, mould, and decay. When stored correctly, these foods can prove helpful in times of need.
Sugar: When stored in a dark and dry place, sugar can be used for as long as you want. Ideally, it’s best to consume it within two years. Keep it in airtight containers to prevent clumps, though hardened sugar is still considered edible.

Soy sauce: Those who love soy sauce would be thrilled to know that they can keep an unopened bottle for three years in the pantry. Even after it has been opened, it can last for a good time if kept in the refrigerator. This is because of its high salt content, which acts as a natural preservative.
Honey: Honey is loved as a sweetener, and the good news is that it can last forever. This is because when bees collect nectar, they mix it with special enzymes in their bodies. This changes the nectar into simple sugars and makes it very acidic and low in moisture. This inhibits bacterial growth. It should ideally be stored in a cool or dark place.
White rice: A staple in Indian households, white rice can last for decades and won’t lose its nutrients or flavour. It should be stored in airtight containers to prevent moisture and pests. Brown rice doesn’t last as long because it contains natural oils in its bran layer. These are removed in white rice during processing.

Salt: Salt is a preservative and so it naturally does not spoil. It has been used for years to preserve vegetables and other foods. It prevents bacterial growth and removes moisture. The only trouble is that it clumps in humidity and requires proper storage.
Dried beans: Even though their overall quality may deteriorate, dried beans, such as lentils, chickpeas, and beans, remain edible even after 30 years. Best consumed within two years, they may take longer to cook after a certain time because they lose moisture.
Pure maple syrup: If you love to pour maple syrup over pancakes, you’d be happy to know that it has an indefinite shelf life. This is because they resist microbial growth because of high sugar content and low water. If there is mould on the surface, it can be removed safely.
Vinegar: Vinegar serves many purposesin households. Due to its acidic nature, it is self-preserving and safe to consume indefinitely. The low pH in vinegar prevents harmful bacteria. While time can affect its quality, flavour, or colour, it is still safe to consume. It should ideally be stored in a cool, dry place.

Instant coffee: This is surely good news for coffee lovers, as instant coffee is known to last for decades. While its potency may degrade over time, it can still be consumed safely. Storing it in airtight containers helps prevent moisture and bacterial growth.
Canned foods: Those who rely on canned foods with low acidic content, such as meat, beans, soups, or vegetables, can store them for two to five years. Even canned goods with high acidity can last for about 18 months. Store them in a cool, dry place, avoiding places with extreme temperatures.
