Ingredients: All-purpose flour (maida), 1 cup; Semolina (sooji), 1/4 cup; Khoya (milk solids), 1/4 cup; Fennel seeds (saunf), 1/4 teaspoon; Cardamom powder (elaichi), 1/2 teaspoon; Milk, 1 cup; Water, 1/2 cup; Sugar, 1 cup; Water (for syrup), 1/2 cup; Ghee, for frying; Chopped nuts (almonds, pistachios) for garnish; A pinch of saffron strands (optional)
Instructions:
Prepare the Batter: In a mixing bowl, combine the all-purpose flour, semolina, and khoya. Add the fennel seeds and cardamom powder to the mixture, infusing the batter with aromatic flavors. Gradually add milk to the dry ingredients, whisking continuously to form a smooth, lump-free batter. The consistency should be thick but pourable, similar to pancake batter. Let the batter rest for about 30 minutes, allowing the semolina to soften.
Make the Sugar Syrup: While the batter is resting, prepare the sugar syrup. In a pan, combine the sugar and water. Heat the mixture over medium flame until the sugar dissolves completely. Allow the syrup to boil for a few minutes until it reaches a one-string consistency. You can add saffron strands at this stage for an extra touch of color and flavor. Once ready, set the syrup aside, keeping it warm.
Fry the Malpuas: Heat ghee in a deep frying pan over medium heat. Once the ghee is hot, pour a ladleful of batter into the center of the pan. The batter will spread out on its own, forming a small pancake. Fry the Malpua until it turns golden brown and crispy on the edges. Flip it gently and fry the other side.
Soak in Sugar Syrup: Immediately immerse the hot Malpua in the warm sugar syrup. Let it soak for a minute, allowing the syrup to infuse the sweet with its rich flavor. Remove the Malpua from the syrup and place it on a serving plate.
Garnish and Serve: Garnish the Malpuas with chopped nuts, adding a delightful crunch.
