Jimikand or suran or elephant foot yam is a tuber that works as an excellent ingredient for fasting. This apart, elephant foot yam is helpful for people with diabetes as it has a chemical compound called Allantoin that has anti-diabetic effects. With a high fibre content and low glycaemic index, it is also known to be good for weight loss. The allantoin compound is also known to prevent cancer and the oil in it has the L-arginine compound, which is known to improve immunity. The tuber also has anti-inflammatory and antioxidant effects and reduces inflammation. According to a scientific study, it can help alleviate menopause symptoms to some extent and help overcome the deficiency of Vitamin B6. Being rich in iron and folate, it helps beat anaemia.
Here is a recipe for Jimikand Ke Gutkhe by Chef Rajnish Malkoti, Executive Chef, Welcomhotel by ITC Hotels, Shimla:
Ingredients
· Jimikand 750 grams
· Desi ghee 2 tbsp
· Jeera whole 1 tsp
· Chopped green chilly 2 nos.
· Hing ½ tsp
· Sendha namak to taste
· Chopped coriander 1 tbsp
· Turmeric powder 1 tsp
· Jeera powder 1 tsp
· Coriander leaves for garnish 2 sprigs
Method
· Peel the Jimikand and cut into small cubes.
· Boil with salt and turmeric
· In a pan heat ghee and add jeera, green chilli, and hing.
· Add turmeric powder, jeera powder and salt and cooked for a minute.
· Add boiled Jimikand, chopped coriander and cook it for five minutes with the spices and garnish with coriander leaves.
· Unless fasting, serve with hot poori and raita.
