In Lucknow, every dish tells a royal tale. Will it be India’s next UNESCO City of Gastronomy?

Lucknow, the historic heart of Uttar Pradesh, is known for more than just its grand architecture, poetic traditions, and gracious manners—it’s a city where food is an essential expression of culture and identity. Now, this culinary legacy is poised for global recognition. The city has been nominated for inclusion in UNESCO’s Creative Cities Network (UCCN) under the Gastronomy category. If selected, Lucknow will become only the second Indian city, after Hyderabad, to receive this honor.

A City Where Cuisine Is Culture

Lucknow’s food culture is deeply rooted in Awadhi cuisine, a legacy of the Mughal and Nawabi eras. Here, cooking wasn’t just a necessity—it was elevated to an art form. The technique of dum pukht (slow cooking in sealed pots), aromatic spice blends, and delicate presentation defined the royal kitchens. Rakabdars, or royal chefs, were treated with the same reverence as court poets or painters.

Every iconic dish has a story. The famous Galouti kebab was invented for a toothless nawab who still craved flavor. Dishes like nihari, traditionally served at dawn, and sheermal, the sweet saffron flatbread, are steeped in historical rituals. In Lucknow, the kitchen has always been a theatre of taste, memory, and elegance.

From kebabs to chaat, Lucknow’s flavours are going global with a UNESCO nod. From kebabs to chaat, Lucknow’s flavours are going global with a UNESCO nod.

What Makes Lucknow’s Food Scene Unique

From heirloom recipes to vibrant street food, Lucknow’s culinary charm lies in its seamless blend of tradition and innovation:

  • Kebabs: From smoky Galouti to delicate Kakori, each bite tells of generations perfecting the art.
  • Biryani: Fragrant and slow-cooked in sealed pots—a celebration of subtlety and spice.
  • Street Food: Legendary tokri chaat, kulcha-nihari, khasta kachori, and basket chaat offer layered textures and bold flavors.
  • Sweets: Iconic treats like makhan malai, kulfi falooda, jalebi with curd, and rabri wrap up meals with indulgence.

Whether served in a heritage haveli or at a bustling street corner, food in Lucknow is more than a meal—it’s a cultural experience.

Why UNESCO’s Recognition Matters

Launched in 2004, UNESCO’s Creative Cities Network celebrates cities where creativity fuels sustainable urban development. Under the Gastronomy category, cities are chosen for their:

  • Unique culinary traditions
  • Cultural integration of food
  • Innovation in local and regional cuisine

If Lucknow’s nomination is approved, it will join culinary greats like Belem (Brazil), Bergen (Norway), and Alba (Italy)—cementing its place among the world’s most iconic food cities.

India’s Creative City List

Lucknow would be the ninth Indian city in the UCCN. Others include:

Hyderabad – Gastronomy

Mumbai – Film

Chennai, Varanasi, Gwalior – Music

Jaipur, Srinagar – Crafts & Folk Arts

Kozhikode – Literature

What This Means for Lucknow

Earning the UNESCO City of Gastronomy title would be a transformative moment. It would:

  • Boost culinary and cultural tourism
  • Preserve heritage cooking practices passed down through generations
  • Inspire innovation in contemporary cuisine and local food entrepreneurship
  • Encourage chef exchanges, food festivals, and global partnerships
  • Promote sustainable food systems and integrate food into urban development
  • Give Lucknow a voice in global food policy discussions and access to collaborative networks

What’s Next?

The nomination—led by the Department of Tourism and Culture—is currently under review. A UNESCO field visit will assess the city’s culinary heritage, food infrastructure, and cultural initiatives. The application showcases everything from the refined art of Awadhi thalis to bustling street food culture and artisanal food craftsmanship.

A City Whose Flavors Speak Louder Than Words

As the world grows increasingly curious about India’s regional cuisines, Lucknow is ready to step into the global spotlight. Its dishes are not only delicious but rich in history, memory, and soul. From the warmth of a morning nihari to the fragrance of a saffron-laced biryani, every flavor tells a story.

If selected, this recognition won’t just elevate Lucknow—it will affirm that food is more than nourishment. It is identity. It is heritage. It is home—served on a plate.
