Chicken tandoori to gulab jamun: Delhi govt finalises menu, rates for official events

From chicken tandoori and mutton rogan josh to paneer tikka, dal makhani, and gulab jamun, the Delhi government has compiled a detailed catering menu for its official functions in the national capital.

The menu has been finalised as part of a plan by the Delhi Tourism and Transport Development Corporation (DTTDC) to empanel outdoor caterers for government events, including programmes held at the Lieutenant Governor’s Secretariat and the Chief Minister’s Secretariat, the corporation told PTI.

The approved spread includes a wide range of Indian breads such as naan, butter naan, garlic naan, roti, kulcha, laccha paratha and rumali roti. Dessert options feature traditional favourites like gulab jamun, jalebi, rasmalai, gajar halwa, kulfi, rabri, rasgulla and raj bhog, along with items such as chocolate truffle cake. Beverages on offer range from tea, coffee and kahwa to lemon tea, fresh juices, mocktails, shakes and a seasonal fruit bar.

According to the DTTDC, light tea has been priced between Rs 80 and Rs 115 per person, depending on the number of guests. Vegetarian high tea buffets will cost between Rs 330 and Rs 575 per person, while non-vegetarian high tea options range from Rs 385 to Rs 645. Lunch or dinner buffets are priced between Rs 660 and Rs 965 per person for vegetarian menus and Rs 880 to Rs 1,265 per person for non-vegetarian menus. Packed refreshments will be available at Rs 150 per person, with additional charges for extra snacks, desserts and dishes.

Fixed rates have also been specified for food stalls offering fruit bars, juices, mocktails, chaat, pizza, chowmein and ice cream. Packed vegetarian thalis are priced at Rs 290 per person, while non-vegetarian thalis will cost Rs 325.

The menu includes vegetarian soups such as tomato shorba, sweet corn soup, cream of mushroom and vegetable clear soup, while non-vegetarian options include chicken clear soup, murgh shorba, yakhni shorba and Thai chicken soup. Snack options range from paneer tikka, samosa and veg spring rolls to mutton seekh kabab, tandoori chicken, chilli chicken and fish tikka.

Main course vegetarian dishes include navrattan korma, malai kofta, shahi paneer, kadhi pakora, bhindi kurkuri and dum aloo. Non-vegetarian offerings feature mutton rogan josh, mutton korma, chicken butter masala, chicken stew, fish fry and Goan fish curry. Several dal preparations and rice options such as basmati rice, jeera rice, veg pulao and fried rice are also part of the menu.

The estimated value of the catering contract has been fixed at Rs 2 crore for two years, with the panel valid until December 31, 2027, and a provision for extension by one year at the discretion of the DTTDC. The last date for submission of bids is January 23.

Once empanelled, the selected caterers will provide services on a call basis for events organised by any Delhi government department. Caterers will be required to arrange crockery, cutlery, uniforms, condiments, cleaning materials and adequate staff, including chefs, captains and waiters.
