Ingredients:

  • Sugar, 2 tablespoons

  • Baking soda, 1/2 teaspoon
  • Salt, 1/4 teaspoon
  • Buttermilk, 1 cup
  • Egg, 1 large
  • Unsalted butter, melted, 2 tablespoons
  • Mixed berries (strawberries, blueberries, raspberries) for topping

Method:
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the buttermilk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Heat a non-stick pan over medium heat and lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.

  • Carefully place the poached eggs on top of the avocado toast.
  • Season with salt and pepper, and add any optional toppings of your choice.

Blueberry Almond Overnight Oats

Overnight oats are a lifesaver for busy mornings, and this blueberry almond version is both nutritious and delicious. Simply prepare it the night before, and wake up to a satisfying breakfast ready to be served.

Ingredients:

  • Rolled oats, 1/2 cup
  • Almond milk, 1/2 cup
  • Greek yoghurt, 1/4 cup
  • Honey, 1 tablespoon
  • Almond extract, 1/4 teaspoon
  • Fresh blueberries, 1/4 cup
  • Sliced almonds for topping

Method:
  • In a jar or container, combine the rolled oats, almond milk, Greek yogurt, honey, and almond extract.
  • Stir in the fresh blueberries.
  • Cover and refrigerate overnight.
  • In the morning, give the oats a good stir and top with sliced almonds before serving.
