
Many people think cooking can reduce the nutritional value of vegetables; thus, they prefer eating them in raw form. While this may be true for some, there are a few vegetables that shouldn’t be consumed raw, as they may cause serious health complications and even land you in the hospital.
Dr Shubham Vatsya, a Fortis gastroenterologist, took to his Instagram account to share three vegetables that you should never consume raw. This is because they carry the risk of harmful bacteria and contaminants that can enter your gut, bloodstream, and even your brain.
Spinach may contain E. coli bacteria and tapeworm eggs, which can survive even after it is washed thoroughly. These parasites can cause stomach aches and serious gastrointestinal infections. Raw spinach also contains high amounts of oxalates, which increase the risk of kidney stones. Boiling, steaming, or cooking spinach reduces the oxalates and kills harmful bacteria.

Cabbage may harbour surface contaminants if not cleaned and cooked properly. It contains tapeworm eggs that enter your bloodstream and reach your brain, causing severe parasitic infections like neurocysticercosis. It is best to boil or cook cabbage to protect your gut and keep it healthy.
Brinjal contains solanine, a natural toxic compound that can cause nausea and digestive problems. Cooking brinjal neutralises the toxin and improves digestibility, making it safe for consumption.
Besides the three, even capsicum, colocasia leaves, and kale should not be eaten raw, as they carry pathogens, unhealthy bacteria, and tapeworm eggs. Cooking using proper methods protects you from infections, boosts immunity, and improves nutrient absorption.
Dr Vatsya advised that these vegetables should be cooked or steamed. Cooking kills harmful bacteria and makes it easier for the body to digest foods. “Proper washing and cooking improve safety and digestion. Healthy eating isn’t just about what you eat, it’s about how you prepare it,” he concluded.
