Walk into any café, wellness store, or refrigerator in a Gen Z household, and you’re likely to spot a colourful bottle of kombucha sitting proudly among the staples. What might have started as a niche health drink has now become a cultural moment. But the sudden rise of kombucha isn’t accidental. This fizzy, fermented drink speaks to a generation that values authenticity, gut health, sustainability, and a little adventure in their everyday choices.

A living drink

Real kombucha is naturally fizzy, filled with live probiotics, and slightly unpredictable because it changes with every batch. Arvind Mohan, Co-founder of Kumbayah Kombucha, explains the science, “A live kombucha contains active probiotics that enter the gut and help balance the microbiome. When the gut has more good bacteria, digestion improves, acidity reduces, and the body breaks down food more efficiently. A steady gut directly affects energy levels because the body is not constantly struggling with bloating or inflammation. Many consumers say they feel lighter, calmer and more energised after they make kombucha a daily habit. This is the result of real fermentation. When kombucha is pasteurized or artificially made, none of these benefits remain. A living drink supports a living system and that is the difference.”

Obsession with Kombucha

A big part of kombucha’s appeal lies in its honesty. Gen Z can spot “wellness washing” a mile away, and they gravitate toward products that feel real, minimally processed, and transparent. Kombucha ticks all the boxes as its fermented, handcrafted, and made with ingredients they can actually pronounce.

The gut-health conversation has also made its way into everyday life. Young consumers want foods that support digestion, reduce bloating, and keep energy levels steady through long days. Kombucha fits naturally into this routine. It offers the satisfaction of a refreshing drink with the added comfort of knowing it’s doing something good for the body.

Real vs. Artificial Kombucha

Not all kombucha on shelves delivers the same experience. Many brands pasteurize or force-carbonate their products to increase shelf life or mimic the natural fizz. But these shortcuts undermine the reason kombucha exists in the first place. Mohan breaks it down, "Real kombucha is made by fermenting tea and sugar with a SCOBY and that process creates acids, enzymes, and good bacteria that support digestion. When brands pasteurize or force carbonate a drink, they remove all the living cultures, and the drink becomes closer to a soda with tea flavour. You can taste the difference, and your body can feel it too. Real kombucha settles the stomach, reduces heaviness, and gives a gentle energy lift without caffeine spikes."

Best way to enjoy a kombucha

Kombucha now comes in a wide range of flavours that are perfect for curious palates. Popular choices include ginger-lemon for digestion, berry blends for a fruity punch, mango or peach for a tropical twist, hibiscus or rose for floral notes, apple-cinnamon for a cosy, winter-friendly brew and mint-lime for summer refreshment.

The ideal time to drink kombucha is mid-morning or mid-afternoon, when the body needs a gentle energy lift. Some prefer it before meals to support digestion, while others enjoy it as a healthier substitute for soda. Sip it chilled, avoid shaking the bottle, and start with half a glass if you're new to fermentation.
