Lucknow, the historic heart of Uttar Pradesh, is known for more than just its grand architecture, poetic traditions, and gracious manners—it’s a city where food is an essential expression of culture and identity. Now, this culinary legacy is poised for global recognition. The city has been nominated for inclusion in UNESCO’s Creative Cities Network (UCCN) under the Gastronomy category. If selected, Lucknow will become only the second Indian city, after Hyderabad, to receive this honor.

Lucknow’s food culture is deeply rooted in Awadhi cuisine, a legacy of the Mughal and Nawabi eras. Here, cooking wasn’t just a necessity—it was elevated to an art form. The technique of dum pukht (slow cooking in sealed pots), aromatic spice blends, and delicate presentation defined the royal kitchens. Rakabdars, or royal chefs, were treated with the same reverence as court poets or painters.

Every iconic dish has a story. The famous Galouti kebab was invented for a toothless nawab who still craved flavor. Dishes like nihari, traditionally served at dawn, and sheermal, the sweet saffron flatbread, are steeped in historical rituals. In Lucknow, the kitchen has always been a theatre of taste, memory, and elegance.
