Makhana (fox nuts or lotus seeds) kheer is a perfect fasting dessert. Roast makhanas lightly, then simmer them in milk, flavoured with cardamom, saffron, and a touch of jaggery. This rich, creamy dessert is light on the stomach yet indulgent enough to satisfy dessert cravings

Soak sama rice for 30 minutes. In a pressure cooker, heat ghee, and sauté potatoes, tomatoes, and green chillies until soft. Add soaked rice, rock salt, and chilli powder. Mix well, add water (1:2 ratio), and pressure cook for 3-4 whistles. Garnish with coriander and serve hot
